  • 1 bay leaf
  • 1 glass of dry white wine

Instructions:

  1. Saffron Infusion:

    • In a small bowl, infuse the saffron threads in a tablespoon of hot water. Reserve.
  2. Preparation of the beans:

    • If you are using dried beans, make sure you have soaked and cooked them according to package directions. If canned, rinse under cold water and drain.
  3. Preparation of the Sofrito:

    • In a large saucepan, heat a generous drizzle of olive oil over medium heat.
    • Add the onion, garlic and green bell pepper. Sauté until tender and lightly browned.
  4. Add Tomatoes and Saffron:

    • Add the chopped tomatoes to the pan and cook until a homogeneous mixture is formed.
    • Pour the saffron infusion and mix well.
  5. Integration of Beans and Broth:

    • Add the cooked beans to the casserole and mix to absorb the flavors of the sofrito.
    • Pour in the white wine and bring to a boil to evaporate the alcohol.
    • Add the fish stock or water, bay leaf, and season with salt and pepper to taste.
  6. Clam Cooking:

    • When the beans are almost tender, add the clams to the pan.
    • Cook until the clams open, making sure to discard any that do not.

    • Remove the bay leaf and serve the beans with clams in bowls.
