Ingredients:
- 400 g white beans (can be canned or previously cooked)
- 500 g fresh clams, cleaned and rinsed
- 1 tablespoon of saffron threads
- 2 ripe tomatoes, peeled and chopped
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 green bell pepper, cut into strips
- 1 bay leaf
- 1 glass of dry white wine
- Fish stock or water (approximately 500 ml)
- Extra virgin olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)


Instructions:
Saffron Infusion:
- In a small bowl, infuse the saffron threads in a tablespoon of hot water. Reserve.
Preparation of the beans:
- If you are using dried beans, make sure you have soaked and cooked them according to package directions. If canned, rinse under cold water and drain.
Preparation of the Sofrito:
- In a large saucepan, heat a generous drizzle of olive oil over medium heat.
- Add the onion, garlic and green bell pepper. Sauté until tender and lightly browned.
Add Tomatoes and Saffron:
- Add the chopped tomatoes to the pan and cook until a homogeneous mixture is formed.
- Pour the saffron infusion and mix well.
Integration of Beans and Broth:
- Add the cooked beans to the casserole and mix to absorb the flavors of the sofrito.
- Pour in the white wine and bring to a boil to evaporate the alcohol.
- Add the fish stock or water, bay leaf, and season with salt and pepper to taste.
Clam Cooking:
- When the beans are almost tender, add the clams to the pan.
- Cook until the clams open, making sure to discard any that do not.
Presentation and Serving:
- Remove the bay leaf and serve the beans with clams in bowls.
